- Roasted vegetables with herbs
Ingredients:
Assortment of vegetables (e.g. carrots, zucchini, peppers, cherry tomatoes)
Olive oil
Fresh thyme, oregano and rosemary, finely chopped
Salt and pepper to taste
Preparation:
Preheat the oven to 200°C.
Cut the vegetables into bite-sized pieces and place them on a baking tray lined with baking paper.
Drizzle the vegetables with olive oil and sprinkle generously with fresh thyme, oregano and rosemary.
Season with salt and pepper and mix everything well.
Roast the vegetables in the preheated oven for 20-25 minutes, or until soft and lightly browned.
Serve hot as a side dish or add to salads.
- Tomato sauce with fresh herbs
Ingredients:
Can of diced tomatoes (400g)
Onion, finely chopped
Garlic, finely chopped
Olive oil
Fresh thyme, oregano and rosemary, finely chopped
Salt and pepper to taste
Preparation:
Heat some olive oil in a pan over medium heat and fry the onion and garlic until soft and light brown.
Add the diced tomatoes and simmer over low heat for 15-20 minutes, or until the sauce has thickened slightly.
Add the fresh herbs and stir well.
Season with salt and pepper and simmer for another 5 minutes.
Serve over pasta, as a base for pizza, or as a dip for bread.
- Grilled chicken with herb marinade
Ingredients:
Chicken fillets
Olive oil
Fresh thyme, oregano and rosemary, finely chopped
Garlic, finely chopped
Lemon juice
Salt and pepper to taste
Preparation:
Mix olive oil, fresh herbs, garlic, lemon juice, salt and pepper in a bowl to make a marinade.
Marinate the chicken fillets in the herb marinade and let rest in the refrigerator for at least 30 minutes to an hour.
Heat a grill pan or barbecue over medium heat.
Grill the chicken breasts for 6-8 minutes on each side, or until cooked through and with nice grill marks.
Serve the grilled chicken with your favorite side dishes and enjoy the flavorful herb marinade.
