Increase in K concentration

The highest average Mc value was achieved after freeze-drying. A decrease in true density was observed after spray drying. The bulk density was related to particle size. The moisture content of apple juice powders ranged from 1.1% to 5.6%.

DPPH radical scavenging activity

DPPH radical scavenging activity is an accepted method for assessing the antioxidant activity of extracts like Cherry Juice Powder. It reflects the potential antioxidant capacity of a plant in vivo. It is also a simple and rapid method. The antioxidant activity of a juice sample is significantly influenced by the process of processing. In the present study, the effect of different processing methods on the antioxidant activity of three apple cultivars was investigated. The results of the present study showed that the DPPH radical scavenging ability of extracts was correlated with the total phenolic content. The free radical scavenging efficiency was also significantly correlated with the total phenolic content.
