Raw Rice Drink: How to Make Homemade Rice Milk?

Rice milk is considered to be the most difficult to make. Indeed, it is not always easy to obtain a result as convincing as when you buy a brick of commercial rice milk. It's normal to make homemade vegetable milk; we don't add additives to improve the texture or keep it longer.

Characteristics of homemade rice milk

Rice milk is rich in carbohydrates and has a slightly sweet taste; manufacturers often add sugar to brick rice milk because, it must be admitted, it is quite bland in nature. I say rice milk, but you will find it under the name "rice drink." You can also find it "without added sugar," which will allow you to use it in both savoury and sweet recipes.

It only contains 1g of fat per 100g and 9g of carbohydrates. It is cholesterol-free and very easily digested. It is well suited to fragile intestines. On the other hand, its glycemic index is high, which is a negative point for those who pay attention to their blood sugar.

Rice milk is not, in my opinion, the best taste consumed alone. On the other hand, when you are tired of "coffee with milk" without cow's milk, it is a very good alternative. It has a slightly sweet taste. The same goes with cocoa powder, but in this case, add a little cashew milk to add creaminess.

It is a naturally gluten-free vegetable milk. It is preferably used in recipes such as for making pastry cream or chocolate cream without gluten or milk.

 

Making homemade rice milk

You can use the type of rice you want; I use whole or half whole basmati rice because it's the one I always have at home (with the round rice for risotto. But it will work with the rice of your choice; prefer it all the same full or half full, for the mineral intake.

I am always surprised by the price of vegetable milk, which is often more expensive than cow's milk! Knowing that they are mainly composed of water, someone will have to explain it to me! To make homemade rice milk, I don't heat the rice, but I soak it well overnight, which makes mixing easier and causes very little deposit in this way. Regarding the preparation for which the rice milk is heated, I find that the result is too viscous and unappetizing. So I prefer to do it raw.

How to make homemade rice milk?

For 500 ml of rice milk

Ingredients

  • 40 g of rice of your choice
  • 500ml filtered water

Preparation

  1. Soak the rice for 12 hours in water.
  2. Drain the water and rinse the rice.
  3. Put the rice in a powerful blender and mix for 2 minutes.
  4. Pass the rice milk to the vegetable milk bag and enjoy immediately. It is optional when the rice is well mixed. The residues are almost non-existent.
  5. You can add a pinch of salt, a little maple syrup, agave syrup or vanilla.

Storage of homemade rice drink

Store your rice milk for a maximum of 48 hours in the refrigerator in an airtight bottle. The idea is to do it and consume it immediately.

What makes basmati rice different from "normal" rice?

The recipe for cooking basmati rice

For optimal texture, taste, and colour, it's recommended to avoid using easy-to-cook rice, which has little to no starch. To prepare rice:

  1. Rinse it multiple times in cold water before letting it soak for at least 30 minutes.
  2. Drain the rice and add it to a saucepan with 500ml of water for 450g of basmati rice.
  3. Bring the water to a boil, add salt, and cover the pot.
  4. Reduce the heat to a minimum and cook for 10 minutes before removing from the heat for 5 minutes.
  5. Use a fork to fluff the rice and serve.

Special rice

The most fragrant rice is Basmati from India and Pakistan or Jasmine from Thailand. Coloured rice can be white, red, purple, or black due to the pigment anthocyanin.
