Kefir milk is a fermented milk that has been made with the help of a "scoby" (symbiotic culture of bacteria and yeast). The scoby is a living organism that you can grow at home, but you can also purchase it from many health food stores or online.

Kefir milk is similar in taste to regular milk, but it's thicker, with more body and less sweetness. It has a slightly sour flavor that some people love and others find too overpowering. You can drink kefir milk straight up or add it to smoothies or other recipes. If you want to make milk kefir at home, then first collect the below ingrediants

Grow Your Scoby

Take your packet of kefir starter culture and place it in a clean jar with a lid. Gently pour your kefir milk into this jar and cover it with cheesecloth or paper towel. Put it back on the counter for 7 days, then move it to the fridge for another 7 days before brewing again. This will help you grow a new scoby .

Digital Refractometer:  Next, you'll need a digital refractometer , A digital refractometer is a piece of equipment that allows you to measure the amount of sugar in a solution. The solution can be anything from water to milk to kefir milk. This is useful for people who are making their own kefir.

Make Milk Kefir:

 Once you have everything, it's time to make your milk kefir!

  1. Place your scoby in a jar of milk (2% or whole) and let it ferment for 24 hours at room temperature.
  2. If you have a digital refractometer, check the PH of your kefir at this point. It should be between 6-7. If it isn't, then add more sugar until it gets to that range.
  3. After 24 hours, strain out the scoby and discard it (or give it to a friend!). You can keep this batch in the fridge for up to 2 weeks; just make sure to shake well before each use.
